Grape variety: 100% Pinot Noir
Variety characteristics: The name is derived from the French words for "pine" and "black" alluding to the varietals' tightly clustered dark purple pine cone shaped bunches of fruit. It is widely considered to produce some of the finest wines in the world, but is a difficult variety to cultivate and transform into wine.
Location of our vineyards: Etchevarría, Canelones, Uruguay, located just 25 km away from the Rio de la Plata.
Soil: Calcareous and permeable undulating fields.
Harvest-Date: Early February Harvest: Manually collected in 18 kg boxes.
Fermentation: 13 days
Malolactic Fermentation: Yes.
Oak ageing: 12 months (30% of the wine without oak in order to keep the best expression of the variety).
Description: This exclusive Pinot Noir presents a typical ruby red colour with an intense nose, showing vibrant cherry fruit with an excellent variety character. The ripe juicy palate displays sweet red fruits with spicy notes.
Food Pairing: This Pinot Noir is well-suited to pair with salmon and poultry. It will play well with creamy sauces, spicy seasonings and vegetable dishes.
Recommended Serving Temperature: 14º to 16ºC.
Decanting: Recommended 30 minutes decanting before drinking.
